Healthy eating and exercise are a dynamic pair that must be used together to create optimal health. A healthy diet not only provides the body with all essential nutrients, but can also facilitate weight loss, improve energy levels, enhance performance, prevent disease and slow the aging process.
Despite popular belief, eating healthy does not have to be difficult, restrictive, or expensive. By making a few small, realistic changes - you can transform your health without giving up everything you love. However, each person is different and so are their nutrition needs - so using a one size fits all program is not usually effective or sustainable. Nutrition should be personalized.
Mandy Seay, RD, LD, is a registered and licensed dietitian who has been trained in all aspects of nutrition but specializes in weight loss/gain, diabetes/pre-diabetes, lipids, preventive nutrition, pregnancy/child health, and general nutrition. She uses a personalized approach when working with clients to figure out what foods and techniques will work best for their preferences, lifestyle, needs, and goals.
What to Expect - Personalized Nutrition
Before your first nutrition consult, you will be provided with an intake form that will give you the opportunity to describe your lifestyle, expectations, goals, health issues/concerns, medications, supplements, etc. Additionally, you will be asked to choose from several types of counseling styles so that the counseling session may be tailored to best suit you (for example: do you want a 2 week menu that tells you exactly what to eat or do you prefer to learn how to choose foods for yourself or do you want something in between).
Your first visit will be approximately 60 minutes. Mandy will ask you about your eating style, health goals, and items you have listed on your intake form. At this time, you will be provided with a personalized nutrition plan through education, goal setting, and meal planning. Mandy will NOT put you on a diet, but instead show you how to eat healthfully - realistically.
Follow-up visits are typically 30-45 minutes in length. When these visits will occur, and how often, will be determined by both you and Mandy during your visit(s), however a minimum of 2 follow-ups is recommended. During follow-up sessions, your progress, stumbling blocks, and barriers will be evaluated and discussed. Together, you and Mandy will problem solve, make new goals, and clarify any items that you feel need to be addressed.
Calories and Macronutrients (protein, carbohydrates and protein)
For the most accurate numbers (calories and macronutrient grams), several factors must be taken into account – age, height, weight, activity level, contributing health factors, etc. This is best achieved through one-on-one counseling. Mandy will need to calculate these numbers to determine what is best for your lifestyle.
You will receive these amounts at your counseling session (unless doing a family session), but what you do with them is up to you. You do not have to count calories if you do not want to, other options are available for helping you better understand and manage the amounts and types of food you eat. Again, your nutrition plan will be tailored to your style.

What’s the Difference Between a Dietitian and a Nutritionist?
Registered dietitian or RD is a legally protected title that can only be used by dietetics practitioners who are currently authorized to use the credential by the Commission on Dietetic Registration of the Academy of Nutrition and Dietetics. Individuals with these credentials have a degree in nutrition, have completed specific academic and supervised practice requirements, successfully completed a registration examination, and maintain requirements for re-certification.
Some RDs may call themselves nutritionists. However, the definition and requirements for the term "nutritionist" vary. Some states have licensure laws that define the scope of practice, but the title “nutritionist” may be used by anyone.
Where and When Will I Be Counseled?
The great news is that this is flexible! At this point in time, there is no office, so counseling sessions can be provided via Skype, in your home*, in a coffee shop or at another convenient location.
Appointment times will vary, but usually will occur on weekends or evenings to better accommodate your schedule.
